The man page used to define sudo as (su)+(do), meaning, 'substitute user' and 'do'. So the pronunciation would be as in 'voodoo' Yet I like that people say it more than one way because it is meme-able. Sudo with a long 'o' sounds like judo, like the admin is wrangling the computer.

If some pedantic pointilist wants to argue about the pronunciation, tell 'em to get some sunlight!
