What's the coolest or weirdest stuff you've fermented?
ApoCalypso saison
This saison is brewed with Pilsner malt and Kernza perennial grain, fermented with my Palatki wild yeast culture and then dry hopped with Calypso. Mildly tart and ridiculously fruity with a little underlying funk. I'm really happy with how this beer turned out.
Palatki kernza saison is finally carbonated, though it feels like it could be a little bit more carbonated than it is. Regardless it's quite delicious, somewhat tart, a little funky, very fruity.

Last night I had an uncarbed pint of the wild yeast saison I dry hopped with Calypso. It is tasting really good, the intense fruitiness from the hops meshes really well with the slight tartness and funky esters from the fermentation. I'm looking forward to how this is going to be once it's fully carbonated.
I picked up a 4-pack of 16 oz cans at Costco of this festbier brewed in Leavenworth WA by Icicle Brewing Co. #beer

So I have a bunch of Calypso hops that were given to me, so I'm going to brew a (sorta) West Coast Pilsner using them.
Calypso's aroma is described as: pear, apple, tropical fruit, melon
Here's my preliminary recipe:

Tokyo / Kanto folks wanting Oregon beer, I guess there is a (Portland) PDX Taproom in Shibuya. The reel shows the tap board which looks pretty solid, and they have ExNovo in cans at least. Anyone been?
